
Cole graduated from the University of New Hampshire in 2017 with a B.S. in Nutrition and Dietetics. He was then accepted into a dietetic internship and M.S. program at Rush University Medical Center in Chicago, IL. After becoming a Registered Dietitian in 2021, Cole worked in an outpatient diabetes clinic before joining The Gut Biome Lab and starting his PhD at Florida State University in 2023. Now a 4th year PhD Candidate, Cole’s research focuses on the gut brain axis, with particular interest in how certain foods may cause variations in the gut microbiome and influence cognition, metabolic health, and neurological function.
In addition to his research, Cole serves as a Graduate Teaching Assistant for several undergraduate courses, including Science of Nutrition and Functional Anatomy and Physiology laboratory courses. He is also an Undergraduate Research Opportunity Program mentor and works closely with undergraduate students to introduce them to microbiome research, experimental design, and scientific communication. His work in the lab centers on understanding how diet and microbial communities interact to influence brain health and metabolic disease risk.
Outside of research and teaching, Cole enjoys golfing, going to FSU football games, and playing poker with friends and professionally when he is not in the lab.
